How to Make Peppercorn Sauce
Step one Melt 1 tablespoon of butter in a heavy saucepan over medium-high heat. Make sure to keep an eye on it as butter can burn very quickly.
Step two Add shallots to your butter and sauté until they begin to brown. This usually takes about 5 minutes.
Step three Add your black peppercorns and crush with the back of a fork to help to mix these into the sauce.
Step four Add stock, brandy and cream and boil until the sauce is thick enough to coat the spoon, whisking occasionally.
Step five Once your sauce has reached the desired consistency, set aside, ready to serve!
