How to make Chakalaka

What you'll need:
- 400g tin baked beans
- 400g chopped tomatoes
- 280g basmati rice
- 1 onion, diced
- 2 garlic cloves, crushed
- 2cm piece of ginger, peeled and grated
- 2 carrots, diced
- 1 red pepper, diced
- 20ml olive oil
- 50g tomato puree
- 1 tbsp curry powder - season to taste

Method:
- Fry the onion on a low heat with the garlic, ginger, tomato paste and curry powder for approximately 5 minutes to release the aroma of the spices and soften the onion.
- Add the chopped tomatoes, carrots and red pepper and cook covered for a further 15 minutes.
- Meanwhile cook the rice according to the packet instructions.
- Add the tin of baked beans to the sauce, and simmer for a further 3 minutes so the beans are warmed through.
- Serve with the rice.
