This is a classic way to enjoy Cathedral City Cheese with ham and is too good to only enjoy on Pancake Day. Try adding mushrooms, a fried egg or even roasted vegetables to your pancake fillings.

How to make Cheese and Ham Crepes

This recipe uses Cathedral City cheese. You can now buy Cathedral City cheese in your closest SPAR store!

What you'll need:

For the pancakes:

•    110g Plain Flour

•    2 Eggs

•    200ml Milk

•    75ml water

•    50g Butter

•    Pinch Salt

For the filling:

•    100g grated Cathedral City cheese

•    4 slices of ham

Method:

1. In a mixing bowl whisk your eggs and flour together until smooth and then gradually add your milk and water into the batter. Season with a pinch of salt and beat until smooth. Use a spatula to push any residue from the sides of the bowl down whilst whisking. Finish your batter with 2 tbsp of melted butter.

2. Preheat your pancake frying pan with a little butter and cook your pancakes for ½ min each side until golden.

3. Fill with grated cheese and a generous slice of ham. Serve with garden salad leaves.
