How to make Cranberry Sausage Rolls
Indulge in a guilt-free twist on a classic Christmas favorite. Each bite is packed with the perfect blend of savory mince, tender chicken, or succulent turkey complemented by the sweetness of cranberries.
What you'll need:
Ingredients:
- 1 roll of puff pastry
- 400g Chicken/Turkey mince (cooked) or 400g shaved Chicken/Turkey, chopped up small
- 2 tbsp cranberry jelly
- 250g brie cheese
- 2 stalks of spring onion
- 1 tsp garlic
- 1 stock cube
- 1 egg
- Fresh parsley
Method:
- Ensure puff pastry is at room temperature by removing it from the refrigerator or freezer well in advance.
- Preheat oven to 180 degrees.
- Lay out puff pastry on a floured surface and roll out with a rolling pin.
- Slice lengthwise into two strips.
- Dollop and spread cranberry jelly and garlic across surface of pastry.
- Into a bowl add minced/chopped Chicken/Turkey, chopped spring onion, ⅔ of the piece of brie (chopped), stock, and parsley.
- Mix well.
- Spoon mixture onto pastry.
- Fold pastry over and use a fork to solidify the join.
- Beat egg with a fork in a mug or small bowl and brush over pastry.
- Bake for 25-30 minutes until golden brown.
- Slice and serve.
