How to make Cranberry Sausage Rolls

Indulge in a guilt-free twist on a classic Christmas favorite. Each bite is packed with the perfect blend of savory mince, tender chicken, or succulent turkey complemented by the sweetness of cranberries.

What you'll need:

Ingredients:

  • 1 roll of puff pastry 
  • 400g Chicken/Turkey mince (cooked) or 400g shaved Chicken/Turkey, chopped up small
  • 2 tbsp cranberry jelly 
  • 250g brie cheese 
  • 2 stalks of spring onion
  • 1 tsp garlic
  • 1 stock cube  
  • 1 egg
  • Fresh parsley 

Method:

  1. Ensure puff pastry is at room temperature by removing it from the refrigerator or freezer well in advance.
  2. Preheat oven to 180 degrees.
  3. Lay out puff pastry on a floured surface and roll out with a rolling pin.
  4. Slice lengthwise into two strips.
  5. Dollop and spread cranberry jelly and garlic across surface of pastry.
  6. Into a bowl add minced/chopped Chicken/Turkey, chopped spring onion, ⅔ of the piece of brie (chopped), stock, and parsley.
  7. Mix well.
  8. Spoon mixture onto pastry.
  9. Fold pastry over and use a fork to solidify the join.
  10. Beat egg with a fork in a mug or small bowl and brush over pastry.
  11. Bake for 25-30 minutes until golden brown.
  12. Slice and serve.
