How to Make Parfait
Sitting somewhere between a mousse and a cheesecake, homemade parfait isn’t actually that hard to make – as long as you’re patient. With the right ingredients and a little effort, you could be enjoying a newfound love for parfait you never knew you had...
What you'll need:
- 100ml water
- 2 Egg Yolks
- 40g Icing Sugar
- 150ml Double Cream
- 2 tsp Vanilla Extract
Method:
- Start by adding sugar and water to a pan and bring to the boil.
- Next, semi-whip the double cream and vanilla extract until you form soft peaks.
- Whisk together your egg yolks until pale and creamy, then slowly add your sugar water mixture.
- Whisk this mixture again until it has doubled in size.
- Fold in the cream and vanilla mixture until it is fully mixed together.
- Finally, serve up into glasses (tumblers or cocktail glasses work well) and leave to set in the freezer for 12 hours.
- Once set, you can customise however you please. A drizzle of caramel, nuts or broken biscuit works a treat!
